I made grandma’s double-decker cookies. She always made them for me. Her molasses cookies have always been my favorite!

Day 4

From grandma’s recipe box:

Double-Decker Cookies

  • 3/4 C sugar
  • 3/4 C butter
  • 1 egg
  • 1 cup molasses
  • 4 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp ginger

Mix the first 3 ingredients, then add remaining ingredients a little at a time, till well mixed. Roll out dough thin. Cut with cookie cutters. I use small round. Bake on greased cookie sheet at 350 degrees for 10-12 minutes. Cool. Frost with 1 tbsp butter – 1/2 C sifted confectioners sugar – 1/8 tsp salt – 1/4 tsp ginger. Mix these well. Add 1 1/2 cups confectioners sugar. Mix with 2 tbsp hot water. Put on one cookie and put another on top. If too thin, I use more sugar.
